Observed improper storage of food items. A box of Ground Beef was stored on the floor of the walk in cooler.
Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least six inches above the floor. STORE THE BOXES OF GROUND BEEF AND ALL OTHER FOOD BOXES OFF OF THE FLOOR AT LEAST SIX INCHES. Correct By: 22-May-2014
3717-1-04.1(Y) / Temperature measuring devices.
Cold or hot holding equipment did not contain a thermometer, or the thermometer was not correctly placed. The cooler under the make station did not have a thermometer.
A properly designed temperature measuring device as specified in this rule shall be located in the warmest part of a cooling unit or the coolest part of a food warming unit. PLACE A THERMOMETER IN THE COOLER UNDER THE MAKE STATION

Cleaned equipment and utensils, laundered linens, or single-service and single-use articles are not properly stored. The cup lids were stored on the floor.
Cleaned equipment and utensils, laundered linens, single-service articles, and single-use articles shall be properly stored as described in this rule. STORE THE LIDS AND ALL OTHER FOOD CONTAINERS ON SHELVES AT LEAST 6 INCHES OFF OF THE FLOOR. Correct By: 22-May-2014
