Cold or hot holding equipment did not contain a thermometer, or the thermometer was not correctly placed. The counter top cooler did not have a thermometer.
A properly designed temperature measuring device as specified in this rule shall be located in the warmest part of a cooling unit or the coolest part of a food warming unit. PLACE A THERMOMETER IN THE COUNTER TOP COOLER. Correct By: 24-Apr-2014

Observed accumulation of soil residue on nonfood-contact surfaces. The condenser in the walk in cooler is dirty.

Receptacles and waste handling units for refuse, recyclables, or returnables shall be: kept covered inside the FSO or RFE if they contain food residue and are not in continuous use, and after they are filled; or with tight-fitting lids or doors if kept outside. EMPLOYEE HEALTH - A model health policy was provided to the PIC and reviewed. Employees may not work when ill with diarrhea, vomiting, sore throat with fever, or jaundice.. Report to the health department if an employee has a doctor confirmed foodborne illness.

PIC KNOWLEDGE - Critical food handling items were reviewed (food temperatures and sanitizer strength) and handout given, and an allergen awareness handout was given and reviewed.

FOOD DEFENSE - A handout on food defense was given and reviewed.
