Observed employee eating, drinking, or using tobacco in non-designated area. An employee was eating in the kitchen.
To ensure proper hygiene, an employee shall eat, drink, or use tobacco only in designated areas where the contamination of exposed food; clean equipment, utensils or linens; unwrapped single service or single use articles; or other items needing protection cannot result. DO NOT PERMIT EMPLOYEES TO EAT IN THE KITCHEN. Correct By: 22-May-2014
3717-1-03.2(C)/Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Observed food that was not properly protected from contamination by separation, packaging, and segregation. Melons in a box were stored on the raw meat.
Food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from cooked ready-to-eat food as described in this rule. To prevent cross contamination from the raw eat to the ready to eat food which could cause a foodborne illness, STORE THE MELONS AND OTHER READY TO EAT FOOD AWAY FROM THE RAW MEAT. THIS WAS CORRECTED AT THE TIME OF INSPECTION BY MOVING THE MELON. Correct By: 22-May-2014
3717-1-03.2(M)/Wiping cloths - use limitation.
Observed improper use and/or maintenance of wiping cloths. A wiping cloth was left on the counter after use.
Cloths that are in use for wiping food spills from tableware and carry-out containers shall be maintained dry and used for no other purpose; cloths in use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer, or laundered daily; cloths used with raw animal foods shall be kept separate from other cloths, dry cloths and solutions shall be free of food debris and visible soil; containers of sanitizer solutions shall be stored off the floor, and used in a manner that prevents contamination. Single-service articles, single-use articles or single-use disposable sanitizer wipes shall be used in accordance with EPA - approved manufacturer's label use instructions. Refrigerated, ready-to-eat, TCS foods held refrigerated for more than 24 hours were not properly date marked. The cheese mix plates were not date marked.
Refrigerated, ready-to-eat, TCS food held refrigerated for more than 24 hours shall be clearly marked at the time of preparation or the time the original container is opened to indicate the date or day to be consumed, sold, or discarded as required in this rule. To prevent the multiple growth of pathogens on food which could cause a foodborne illness, DATE MARK THE HOME MADE CHEESE MIX AND OTHER READY TO EAT TCS FOODS. A thermometer capable of accurately measuring the temperature of thin foods was not available. A thin probe thermometer was not available.
A food temperature measuring device with a suitable small-diameter probe shall be provided and readily accessible to measure the temperature of thin foods. OBTAIN A THIN PROBE THERMOMETER.
