Time as a public health control was being used without the proper written procedures. Although there was a written procedure for the time making of the tomatoes, there was not one for the lettuce.
If time without temperature control is used for TCS food before cooking, or for ready-to-eat TCS food that is displayed or held for sale or service, written procedures shall maintained in the FSO or RFE and made available to the licensor. To prevent the multiple grow of pathogens that could cause a foodborne illness, OBTAIN THE WRITTEN PROCEDURE FOR TIME MARKING OF THE LETTUCE. THE MANAGER WAS LOOKING INTO THIS AT THE TIME OF INSPECTION. Correct By: 06-Jun-2014
