Miscellaneous sources of contamination observed. The ice in the walk in freezer was dripping on food boxes.
Food shall be protected from contamination that is not specified under 3717-1-03.2 (A) to (X). To protect food from contamination from non-potable water, REPAIR THE DRIPPING IN THE FREEZER. UNTIL IT IS FIXED, MOVE THE BOXES FROM UNDER THE DRIP. THIS WAS CORRECTED AT THE TIME OF INSPECTION BY MOVING THE BOXES AWAY FROM THE WALL. Correct By: 10-Sep-2014

Comments
The ice machine should be emptied, cleaned and sanitized at least monthly.
The pop nozzles should be cleaned and sanitized daily. The 3 compartment sink should be used. Do not just wipe off with a sanitizer cloth.
A person must be at the facility to check food when it is delivered. Check for damaged packages, dented canned, wholesomeness of food, and proper temperatures of TCS Food. This is also important in terms of food defense.

FOOD DEFENSE - food defense was briefly discussed. Although some items are recommended, it is required that the person-in-charge ensure that someone sees the food when it is delivered.

The chicken should not be stacked when cooling.
