3717-1-03.4(F)(1)/Time/temperature controlled for safety food - hot and cold holding.
TCS foods were not being held at the proper temperature. The milk in the walk in cooler was 43 degrees.
Except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above (except for those roasts that are cooked as required may be held at 130° F), or at 41°F or less. The cooler was adjusted at the time of inspection. ADJUST THE COOLER TO 41 DEGREES OR LESS TO PREVENT PATHOGENS GROW WHICH COULD LEAD TO A FOODBORNE ILLNESS. Correct By: 22-Mar-2014

Observed no covered receptacle in women's restroom.

EMPLOYEE HEALTH - A model health policy was provided to the PIC and reviewed. Employees may not work with food when ill with diarrhea, vomiting, sore throat with fever, or jaundice.. Report to the health department if an employee has a doctor confirmed foodborne illness.

PIC KNOWLEDGE - Critical food handling items were reviewed (food temperatures) and handout given, and an allergen awareness handout was given and reviewed.

FOOD DEFENSE - A handout on food defense was given and reviewed.
