3717-1-04.4(L) / Mechanical warewashing equipment - hot water sanitization temperature
Critical The rinse temperature in a mechanical warewashing operation is not adequate to sanitize dishes and utensils. The dishwasher was not reaching proper temperature.
To prevent pathogen growth: in a mechanical operation, the temperature of the fresh hot water sanitizing rinse as it enters the manifold may not be more than 194˚F, or less than: For a stationary rack, single temperature machine, 165˚F; or for all other machines, 180˚F. REPAIR DISHWASHER SO IT REACHES 180 ON THE FINAL RINSE. HAND SANITIZE UTENSILS UNTIL MACHINE IS FIXED. Correct By: 19-Oct-2015

Equipment is not approved by a recognized testing agency.

Equipment and/or components are not maintained in good working order. The student side prep cooler was 44 degree, but no food was in the cooler.
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code. ADJUST THE STUDENT SIDE PREP COOLER TO 41 DEGREES OR LESS. DO NOT USE THE COOLER UNTIL FIXED. Correct By: 29-Oct-2012

The light intensity in an area where an employee was working with food, utensils or equipment was less than fifty foot candles.
The light intensity shall be at least fifty foot candles (five hundred forty lux) at a surface where a food employee is working with food, utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor. The ceiling tile in the student side utility room and the teacher bathroom is not nonabsorbent. When the ceiling tile gets dirty or damaged, change the tile to a washable, nonabsorbent tile.
