Working containers used for poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. To prevent misuse of chemical that would not sanitize equipment or destroy pathogens that could cause a foodborne illness, PROPERLY LABEL THE SPRAY BOTTLE. 3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Observed improper storage of food items. The pop in cardboard boxes were stored on the floor.
Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least six inches above the floor. STORE THE POP IN CARDBOARD BOXES OFF OF THE FLOOR. Correct By: 13-Sep-2014

Cold or hot holding equipment did not contain a thermometer, or the thermometer was not correctly placed. The ice cream freezer and the So Low cooler did not have a thermometer.

Observed light bulbs or heat lamp that were not properly shielded or coated where required. The light in the So Low cooler is no shield.
Light bulbs shall be shielded, coated, or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils, or linens, or unwrapped single-service or single-use articles and does not apply in areas used only for storing food in unopened packages. An infrared or other heat lamp shall be protected against breakage by a shield surrounding and extending beyond the bulb so that only the face of the bulb is exposed. PLACE A THE SHIELD ON THE LIGHT BULB IN THE SO LOW COOLER. Correct By: 13-Sep-2014

EMPLOYEE HEALTH - A model health policy was provided to the PIC and reviewed. Employees may not work with the food when ill with diarrhea, vomiting, sore throat with fever, or jaundice. Report to the health department if an employee has a doctor confirmed foodborne illness.

PIC KNOWLEDGE - Critical food handling items were reviewed (food temperatures) and a handout was provided, and an allergen awareness handout was provided and reviewed.

FOOD DEFENSE - A handout on food defense (ODA's Food Security Planning Checklist) was given and reviewed.
