Observed outdoor refuse containers without tight fitting lids, doors, or covers. The dumpster lid was left open.
Receptacles and waste handling units for refuse, recyclables, or returnables used outside with materials containing food residue, shall be designed and constructed to have tight-fitting lids, doors, or covers. KEEP THE DUMPSTER LID CLOSED. Correct By: 30-May-2014

FOOD DEFENSE - A food defense booklet (NYSHD’s Food Defense Strategies) and possible vulnerable points to protect food from intentional contamination were briefly discussed. (Facility security, employee training and restrictions, and food storage, handling, and control were reviewed).

REMINDERS - Change gloves after cleaning and before returning to food prep.
-Rinse off lemons before cutting.

This Facility uses time as a public health control for the lettuce. The lettuce is held at room temperature for a max of 2 hours. The next licensing period they will be licensed as a level 4 operation.

All managers are ServeSafe Certified.
An allergen awareness handout was given and reviewed.
An employee health policy was not available at this time. Keep a copy in the store.
