Critical Refrigerated, ready-to-eat, TCS foods held refrigerated for more than 24 hours were not properly date marked. The date of preparation was used for dating.
Refrigerated, ready-to-eat, TCS food held refrigerated for more than 24 hours shall be clearly marked at the time of preparation or the time the original container is opened to indicate the date or day to be consumed, sold, or discarded as required in this rule. To avoid confusion in date marking, DATE MARK THE READY TO EAT TCS FOOD WITH THE LAST DAY OF USE.

Equipment and/or components are not maintained in good working order. The gasket on the True Two Door Reach In Cooler is broken.
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code. REPLACE THE GASKET ON THE TRUE TWO DOOR REACH IN COOLER. Correct By: 16-Jun-2014

EMPLOYEE HEALTH – Information about the person in charge’s responsibility to share information about certain reportable illnesses and symptoms with food employees was provided to the person in charge (PIC). Reportedly, food employees have been informed of their responsibilities.

PERSON IN CHARGE (PIC) – Printed information about allergy awareness, critical food handling items, and level 1 food safety training was provided to the person in charge (PIC).

FOOD DEFENSE - A food defense booklet (NYSHD’s Food Defense Strategies) and possible vulnerable points to protect food from intentional contamination were briefly discussed.

Check the cooling process of the Lasagna to ensure that it cools from 135 to 41 degrees within 6 hours.

All the required corrections have been made from the 1-13-14 inspection
