3717-1-03.4(G)/Ready-to-eat, time/temperature controlled for safety food - date marking. Refrigerated, ready-to-eat, TCS foods held refrigerated for more than 24 hours were not properly date marked. Hard boiled eggs and a few items in the meat walk in cooler were dated with the day they were prepared or the package was opened. This is a critical violation because bacterial will grow to unacceptable levels beyond 7 days and consistent proper date marking is necessary. Both the violations from the 11-9-13 inspection have been corrected.. -the spray arm nozzle for the dish machine pre-rinse has been adjusted so that it hangs more than 1 inch above the rim of the sink. -date marking is now done with the last date of use. NO VIOLATIONS SEEN Please submit plans for the new walk in cooler and freezer. |
