3717-1-03.4(G)/Ready-to-eat, time/temperature controlled for safety food - date marking.
Refrigerated, ready-to-eat, TCS foods held refrigerated for more than 24 hours were not properly date marked. Hard boiled eggs and a few items in the meat walk in cooler were dated with the day they were prepared or the package was opened.
This is a critical violation because bacterial will grow to unacceptable levels beyond 7 days and consistent proper date marking is necessary. DATE MARK THE EGGS AND OTHER READY TO EAT TCS FOOD WITH THE LAST DAY OF USE. Correct By: 09-Nov-2013
3717-1-05.1(D)/Backflow prevention - air gap.
The air gap on the spray arm before the dishwasher was not sufficient to prevent back siphonage of contaminated water.
PROVIDE AN AIR GAP BETWEEN THE SPRAY ARM NOZZLE AND THE FLOOD LEVEL RIM OF THE TABLE AT LEAST 1 INCH. Correct By: 23-Nov-2013

Both the violations from the 11-9-13 inspection have been corrected..
-the spray arm nozzle for the dish machine pre-rinse has been adjusted so that it hangs more than 1 inch above the rim of the sink.
-date marking is now done with the last date of use.
