Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code. REPLACE THE GASKET ON THE TRUE TWO DOOR REACH IN COOLER. REPORTEDLY, OPERATOR IS WORKING ON FINDING REPLACEMENT GASKETS. Correct By: 16-Jul-2014

The person in charge did not ensure that persons unnecessary to the operation were not present in food prep or storage areas. An infant was in the kitchen.
The person in charge shall ensure that persons unnecessary to the operation are not allowed in the food preparation, food storage or warewashing areas, except brief visits and tours may be authorized. To prevent cross contamination from the infant to the food, MAKE OTHER ARRANGEMENTS FOR THE CARE OF THE INFANT. DO NOT PERMIT CHILDREN OR BABIES IN THE PREP AREA, STORAGE AREA, OR DISHROOM. Refrigerated, ready-to-eat, TCS foods held refrigerated for more than 24 hours were not properly date marked. The date of preparation was used for dating.
Refrigerated, ready-to-eat, TCS food held refrigerated for more than 24 hours shall be clearly marked at the time of preparation or the time the original container is opened to indicate the date or day to be consumed, sold, or discarded as required in this rule. To avoid confusion in date marking, DATE MARK THE READY TO EAT TCS FOOD WITH THE LAST DAY OF USE.
