Critical There is no test kit available for measuring the concentration of the sanitizer. Sanitizer test strips were not located during inspection.
A test kit or other device that accurately measures the concentration in PPM (mg/L) of sanitizing solutions shall be provided. To ensure the proper sanitizer strength to destroy pathogens that could cause a foodborne illness, OBTAIN SANITIZER TEST STRIP FOR CHLORINE AND USE THEM REGULARLY. Correct By: 16-Dec-2013

Observed improper storage of food items. A few boxes of food were stored on the floor in the walk in freezer.

Fixed equipment did not appear to be properly sealed or spaced for cleaning. The 2 compartment sink and 3 compartment sink are not sealed to the wall.
Equipment that is fixed shall be installed so that it is spaced to allow access for cleaning, from adjoining equipment, walls, and ceilings a distance of not more than one thirty-second inch or one millimeter; or sealed to adjoining equipment or walls, if the equipment is exposed to spillage or seepage; Counter-mounted equipment shall be installed to allow cleaning of the equipment and areas underneath and around the equipment as specified in this rule. IT IS RECOMMENDED THAT AT LEAST ONE STAFF MEMBER ON EACH SHIFT RECEIVE FOOD SAFETY TRAINING. THERE ARE CLASSES OFFERED FROM THE RICHLAND AND HURON CO HEALTH DEPT. AND ON-LINE CLASSES WHICH TAKE 2-3 HOURS TO COMPLETE.
THE HAND SINK, METAL DRAWER, AND WALK IN COOLER SHELVES ARE RUSTY AND/OR BECOMING DIFFICULT TO CLEAN. PLANS SHOULD BE MADE TO REPLACE OR REPAIR THIS ITEMS IN THE FUTURE.
