3717-1-03.4(F)(1) / Time/temperature controlled for safety food - hot and cold holding.
Critical CorrectedDuringInsp TCS foods were not being held at the proper temperature. The Sandwiches in the front sandwich cooler were 44 degrees.
Except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above (except for those roasts that are cooked as required may be held at 130° F), or at 41°F or less. To limit the growth of pathogens that could cause a foodborne illness, ADJUST THE FRONT SANDWICH COOLER TO 41 DEGREES OR BELOW. DO NOT USE THE COOLER UNTIL IT CAN MAINTAIN TCS FOOD AT 41 DEGREE OR BELOW. THIS WAS CORRECTED AT THE TIME OF INSPECTION BY MOVING THE SANDWICHES TO A COOLER THAT WAS MAINTAINING TCS FOOD AT 41 DEGREES OR BELOW. Correct By: 23-Aug-2014

Observed improper storage of food items. Boxes of Combos were stored on the floor.
Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least six inches above the floor. STORE THE FOOD (EVEN IN BOXES) AT LEAST 6 INCHES OFF OF THE FLOOR. Correct By: 24-Aug-2014
3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are dirty. The liner on the bottom of the dairy case is dirty.

3717-1-06.1(I) / Light bulbs - protective shielding.
Observed light bulbs or heat lamp that were not properly shielded or coated where required. The light over the meat case was not shielded and the light in the 7Up cooler was not shielded.
Light bulbs shall be shielded, coated, or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils, or linens, or unwrapped single-service or single-use articles and does not apply in areas used only for storing food in unopened packages. An infrared or other heat lamp shall be protected against breakage by a shield surrounding and extending beyond the bulb so that only the face of the bulb is exposed. INSTALL LIGHT COVERS (SHIELDS) OVER THE LIGHTS IN THE MEAT CASE AND THE 7UP COOLER. Correct By: 06-Sep-2014
