PIC unable to demonstrate knowledge by having no critical violations. OBSERVED: Critical violations in facility. Facility shall have a manager with knowledge of the food code to prevent critical violations which could cause a foodborne illness. Provide manager with education.

Unnecessary or nonfunctional items and /or litter on premises. OBSERVED: Drink machine, old grill parts? No longer being used. To prevent clutter remove & store unused equipment.
