3717-1-04.4(N)(1)/Manual and mechanical warewashing equipment, using chemical sanitization (chlorine) - temp., pH, concentration, and hardness
The concentration and/or temperature of a chlorine sanitizing solution did not meet the minimum requirements specified in the code. OBSERVED: No sanitizer in the dishwasher. To prevent the growth of pathogens which could cause a foodborne illness. Sanitizer shall be available. Hand sanitize in 3 compartment sink until repaired
To prevent pathogen growth, a chlorine solution shall have a minimum temperature based on the concentration and pH of the solution as specified in the code. Correct By: 27-Feb-2017
3717-1-06.1(M)/Outer openings - protected.
Observed an outer opening, window, or door without proper protection against the entry of insects and rodents. OBSERVED: back door open & screen door is torn & not preventing insects and pests from entering the premises which could cause a foodborn illness. Close door until screen door is repaired
To prevent contamination, outer openings of an FSO or RFE shall be protected against the entry of insects and rodents as specified in this rule.
3717-1-03.4(F)(1)/Time/temperature controlled for safety food - hot and cold holding.
TCS foods were not being held at the proper temperature. OBSERVED: Delfield single door refrigerator at 52 degrees,To prevent the growth of pathogens which could cause a foodborn illness. All cold holding units shall be maintained at 41 degrees or lower, Discard all TCS foods from unit. ie, soup, eggs,CORRECTED: Employee discarded TCS foods into the trash
To prevent the growth of pathogens, except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above (except that roasts cooked using time and temperature parameters in 3717-1-03.3 may be held at 130° F), or at 41°F or less.
