Critical Person in charge did not ensure that employees are informed of their responsibility to report information about their health. A written policy was not available, and employee were not aware of symptoms not to work with.
To prevent transmission of foodborne illness, the person in charge shall ensure that food and conditional employees are informed of their responsibility to report information about their health as it relates to diseases that are transmissible through food. Observed improper storage of food items. Eggs were stored under the bottom shelf in the walk in cooler.
Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least six inches above the floor. MOVE EGGS TO A SHELF IN THE COOLER, BUT STILL DO NOT STORE EGGS OVER ANY READY TO EAT FOOD. Correct By: 04-Jul-2015
