Miscellaneous sources of contamination observed. Employee food was in the walk in cooler stored over customer food.
Food shall be protected from contamination that is not specified under 3717-1-03.2 (A) to (X). To prevent cross contamination from employee food to customer food with pathogens that could cause a foodborne illness, STORE EMPLOYEE FOOD ON THE BOTTOM SHELF IN THE WALK IN COOLER. Observed a build-up of dirt and debris. The floor was dirty behind the ice machine.

Clean and sanitize the pop nozzles daily.

PERSON IN CHARGE (PIC) – The PIC was aware of major food allergens (NUTS, PEANUTS, SOY, MILK, FISH, SHELLFISH, WHEAT, EGGS), requirements for holding temperatures (41, 135), date marking (7 DAYS), thawing (UNDER REFRIGERATION), and symptoms of illness (DIARRHEA, VOMITING, SORE THROAT WITH FEVER, JAUNDICE). PIC was unsure of sanitizer strength (200-400 PPM QUAT).

EMPLOYEE HEALTH – A written policy was not available. PIC must be knowledgeable of symptoms employees must not work with (diarrhea, vomiting, sore throat with fever, or jaundice). Employees must be aware of symptoms and responsibility to report to PIC. PIC should know to report doctor confirmed foodborne illnesses to the health department. Review with employees.
