3717-1-04.4(N)(3) / Manual and mechanical warewashing equipment, using chemical sanitization - temp., pH, concentration, and hardness
Critical CorrectedDuringInsp A quaternary ammonium sanitizing solution did not meet the minimum requirements for temperature, concentration, and/or water hardness. The sanitizer in the 3 compartment sink was 100-150 PPM.
A quaternary ammonium sanitizing solution shall: (a) Have a minimum temperature of 75F,(b) Have a concentration as specified and as indicated by the manufacturer's use directions included in the labeling, (c) Be used only in water with 500 ppm (mg/l) hardness or less, or used in water having a hardness no greater than specified by the manufacturer's label. To assure proper sanitizing of utensils and equipment used for food contact, INCREASE THE SANITIZER STRENGTH TO BETWEEN 200-400 PPM IN THE 3 COMPARTMENT SINK. THE SANITIZER STRENGTH WAS INCREASED AT THE TIME OF INSPECTION BY ADDING ANOTHER TABLET TO THE SINK. IT WAS 300 PPM AFTER THE ADJUSTMENT. Correct By: 02-Aug-2014

Critical CorrectedDuringInsp Observed working containers of poisonous or toxic chemicals that were not properly labeled with the name of the material. There are 4 -5 spray bottles that are not labeled.
Working containers used for poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. TO AVOID ACCIDENTAL POISONING, LABEL THE SPRAY BOTTLES WITH THE NAME OF THE CONTENTS. THIS WAS CORRECTED AT THE TIME OF THE INSPECTION. Correct By: 02-Aug-2014

Observed improper storage of food items. The onions were stored on he floor.
Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least six inches above the floor. STORE THE ONIONS ON A SHELF OR OTHER STORAGE AREA AT LEAST 6 INCHES OFF OF THE FLOOR. Correct By: 03-Aug-2014

Cleaned equipment and utensils, laundered linens, or single-service and single-use articles are not properly stored. The Styrofoam trays were stored on the floor.

Outdoor refuse storage surface is not properly constructed, and sloped to drain. The asphalt under the dumpster is deteriorating.
An outdoor storage surface for refuse, recyclables, or returnables shall be constructed of nonabsorbent material and shall be smooth, durable, and sloped to drain. REPAIR THE ASPHALT UNDER THE DUMPSTER. Correct By: 22-Aug-2014

Observed no covered receptacle in women's restroom. The employee bathroom did not have a covered container.

Observed no handwashing sign(s) posted at handwashing sink(s) used by employees. The hand sink in the kitchen and behind the bar did not have a hand washing sign.

Observed mops being dried using an unapproved method. The mop head was in the mop sink.
After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies. HANG THE MOP UP TO INCREASE THE DRYING EFFICIENCY. Correct By: 02-Aug-2014

FOOD DEFENSE - A food defense booklet (NYSHD’s Food Defense Strategies) and possible vulnerable points to protect food from intentional contamination were briefly discussed.

Place the outside grill on a hard cleanable surface before using. Gravel surface is not acceptable.
