Critical Corrected During Inspection Rice scoop stored in standing water.
Rice scoop can only be stored in standing water if the water is at 135F or above to control the growth of bacteria. The rice scoop can be stored in a clean location for up to 4 hours. After 4 hours time the scoop must be cleaned and sanitized or replaced with a new scoop that has been cleaned and sanitized.
3-304.12 / IN-USE UTENSILS, BETWEEN USE STORAGE
Spoon stored improperly with handle not out of the product (container of cream cheese for WonTon) in the refrigerator.
Store untensils with handles out of the product (food). All untensils must have handles.

Critical Cardboard used to cover the shelves in chefs reachin refrigerator and in the walk-in cooler is not clean.
Remove the cardboard and replace with a shelving cover that is smooth, cleanable and non-absorbent. The shelving must be clean inside of the reachin refrigerators and walk-in cooler because this is where food is placed. Used cardboard is not clean.
4-601.11(C) / NON-FOOD CONTACT SURFACES
Doors on the Coca Cola refrigerators are not clean (food buildup from frequent touching).
Keep the doors in your refrigerators clean inside and outside. This area is touched frequently during food operations in your kitchen and therefore must be kept clean.
5-203.14 / BACKFLOW PREVENTION DEVICE, WHEN REQUIRED (AIR GAP)
Critical Mop sink is not provided with a back flow preventiion device.
Provide a back flow device to protect contaminants from being back siphoned into the water supply system.
Comments
1) All food must be stored in containers that are approved for food storage/contact such as NSF containers.
2) Clean and sanitize the plastic containers in the top of the prep unit at least every 24 hours to prevent bacterial growth.
3) Place handwashing signs and 3-compartment sink signs above handsinks and 3-compartment sink.
