Comments
This consultation inspection was preformed per request by the owner. The owner would like to use the new out door patio/porch and bar area for this up coming weekend.
A few issues were observed at the time of inspection.
1) This outdoor bar area was not properly supplied with a hand washing sink designated for hand washing only. A properly supplied hand washing sink must be provided at all times to promote proper hand washing by employees.
2) This area was not properly supplied with a means to ware wash bar utensils. A 3 compartment ware washing sink will be required in order for a full bar to be served.
These issues will prevent the outdoor bar from being approved to serve mix beverages and anything food service operation that requires proper hand washing or warewashing.
If the Outside Bar is to be used, a restriction to ONLY serve unopened prepackaged beverages (risk class 1 activities) shall be permitted. This restriction has been printed on the back of the license.

Risk level I: poses potential risk to the public in terms of sanitation, food labeling, and sources of food, storage practices, or expiration dates. Examples of risk level I activities include, but are not limited to, an operation that offers for sale or sells:

(1) coffee, self-service fountain drinks, prepackaged non-potentially hazardous beverages;
(2) pre-packaged refrigerated or frozen potentially hazardous foods;
(3) pre-packaged non-potentially hazardous foods;
(4) baby food or formula
(5) food delivery sales operations

In order for the Plans of this Retail Food Establishment to be approved the following must be completed or provided:
1) A properly supplied hand washing sink shall be provided at the outside bar
2) a means to ware wash equipment and utensils shall be provided at the outside bar
3) A grate or screen shall be provided on the exhaust fan
4) Condensation drainage lines from AC unit, walk-in coolers and freezers shall be properly draining to a municipal waste line that will be treated
5) A designated food preparation sink with properly air gap drainage shall be provided
6) A designated service/mop/slop sink is required
7) An additional gate/fence/door shall be provide to prevent customers from wondering to the walk-in area. The side door to the main building shall not be used by the customers because if it was to be used the customers would have to enter the kitchen/bar area. Customers are not permitted in the kitchen or bar area.
8) The plans submitted did not provide information regarding the exsiting primary hot water generator. Provided specifications for the existing hot water generator/tank
9) A new layout of the Food Facility and outside bar area will need to be resubmitted for a approval.
